The Best Gluten-Free Banana Bread Muffins

I recently posted about being blessed with an entire BOX of bananas and what we did to put them up, here. I’ve had folks asking for the heavenly Gluten-Free Banana Bread Muffin recipe we used, so I thought I’d just post it and share!

Heavenly Gluten Free Banana Bread Muffins Recipe

4 T Butter, melted
1/2 C Sugar or Honey
2 eggs
1 very ripe banana
1 3/4 C Pamela’s Baking & Pancake Mix
1/4 t salt
1/2 t vanilla
Beat together the melted butter, sugar (or honey), eggs, and banana. Add remaining ingredients, and mix together. Pour into (greased or papered) muffin tins (we used mini muffin tins) and ladle in your muffin mix to about the halfway point. Bake at 350 for about 10-15 minutes for mini muffins, about 25 minutes for full-size muffins. You can use this recipe for Banana bread too—just use mini loaf pans, full-sized tend to have to be baked so long that it dries this great moist bread right out. Watch carefully and do not overbake. These make deliciously moist yummy muffins!
These were the best gluten-free muffins we’ve ever had! The whole family (GF and not) loved them! Make plenty!
